Dàkos (or Ntàkos ) is a Cretan recipe for a meze (an appetizer or accompaniment to booze) that is practically a salad. In summer it is a great solution for a light and refreshing meal.

Preparation is simple. Soak the paximadi with a small amount of water. How much depends on how hard or friable is the paximadi you have chosen and the state of your teeth! 🙂 Anyway, keep in mind that you will later add the tomato liquids and the oil, so do not overdo it with the water.
Put the paximadi in the center of a plate, salt slightly, cut over it a tomato into small pieces, allowing the liquid to fall on its surface. Crumble the cheese, which can be feta or xinomisìthra on top of the tomato. Sprinkle with olive oil at will, oregano, pepper or paprika if you want, and complete it with a few olives or capers. Done!
If you are making more than one portion is best to prepare the tomato apart, prior to wetting the Paximadia, so that they do not remain too long soaked during preparation. Some recipes prefer the tomato grated (trifti tomata) instead of chopped.
