The ingredients for making the Tzatziki can be found everywhere. A yoghurt type ‘straggistò’ (drained), which is the most dense and perfect for keeping the needed creaminess. A medium sized cucumber, garlic at will, a pinch of salt and pepper, a tablespoon of olive oil. |

Grate the cucumber in a bowl, using the large holes, until you have a volume equal to that the yogurt. Many prefer not to peel the cucumber, others consider the peel indigestible … certainly a little peel adds color. |

Sprinkle the cucumber with a bit of salt, wait a minute and then squeeze it with your hands trying to get rid of all the liquid. Add the crushed garlic and all other ingredients and mix well. |

You can eat right away, even if it is better to let it rest in the fridge about half an hour, to allow flavors to blend. |
